粉絲蟹煲
材料
膏蟹2隻
粉絲4札
薑1舊
蔥大量
處理
1. 蟹中間1開2。
2. 輕手用刀背拍一拍蟹鉗。
3. 輕手洗淨蟹蓋及蟹件擎乾水。
4. 蔥洗淨切段。
薑洗淨切片。
5. 粉絲清水浸軟擎乾水剪刀剪短清水沖乾淨擎乾水。
6. 預備2茶匙生粉炸蟹。
烹調
1. 中火在鑊中燒熱200毫升油。
2. 蟹膏部分沾上生粉放鑊中。
3. 蟹蓋都是一樣。
4. 炸了1分鐘反轉蟹件放蟹鉗。
5. 又多炸了1分鐘隔去油。
6. 爆香薑片。
7. 加入蠔油1湯匙及水300毫升。
8. 加入糖2茶匙。
9. 加入粉絲。
10. 如果水分不夠可再加入滾水。
11. 水分已被粉絲吸收預備煲仔。
12. 放蔥段入煲仔。
13. 先放粉絲蟹放上面。
14. 用中火煲滾完成可享用。
Crab Claypot with rice vermicelli:
Ingredients:
Crab 2 Nos.
Rice vermicelli 4 Nos.
Ginger 1 No.
Green onion 1 No.
Preparation:
1. Crab, cut in the midlle to be divided into 2 shares.
2. Beat the claws by the chopper lightly.
3. Rinse the crab shell and pieces lightly. Hang dry.
4. Green onion, rinse, cut in lengths.
Ginger, rinse and slice.
5. Rice vermicelli, soften in tap water, cut into short lengths. Rinse thoroughly and hang dry.
6. Prepare tapioca starch 2 tsp for deepfrying the crab.
Steps:
1. Heat up 200ml oil at medium flame in wok.
2. Dip tapioca starch covering up the crab roe, then put in wok.
3. Do the same to the crab shell.
4. Flip over the crab pieces after frying for 1 minute. Put the claws.
5. Have already fried for another 1 minute. Pour away the oil.
6. Fry ginger slices.
7. Add oyster 1 tbsp and water 300ml.
8. Add sugar 2 tsp.
9. Put rice vermicelli.
10. Add boiled~up water if there is not enough water in wok.
11. Water has been absorbed by rice vermicelli, get ready for the claypot.
12. Put green onion in the pot.
13. Put rice vermicelli, then the crab.
14. Heat up at medium flame. Serve.
