Pinoy Style BBQ Skewers

3.97 Pork Butt
1 cup minced garlic
2 cups mama sitas bbq
1 cup sprite, or (7up or gingerale)
1/2 cup soysauce (maggie, silverswan, datuputi)
1 cup UFC banana ketsup (jufran or papa ketsup)
1/2cup brown sugar
2 cups hickory bbq sauce
1 tbsp ginisa mix
1 tbsp ground black pepper

For Garlic Soy Sauce Vinegar Dip
4 minced garlic cloves
1 large red onions chopped
4 pcs chopped red chillies
2 tbsp brown sugar
1/2 cup cane vinegar
2 cups soy sauce
1/2 cup water
(mix together in a small bowl)

1. Rinse pork butt drain well, Pat dry and cut into strips.
2. In a medium bowl combine all the marinade ingredients (sprite, mamasitas bbq marinade, garlic, ginisa mix, ground black pepper, ketsup, soy sauce, hickory bbq sauce, brown sugar, calamansi juice)
3. Pour 3/4 of the marinade sauce onto the meat and massage meat to fully incorporate. Marinate for 4 days for best results.
4. In a small sauce pan boil the rest of the bbq marinade until the sauce thickens then set aside.
5. After 4 days, Soak the bamboo skewers in water for at least 30 minutes to prevent from burning during grilling. Assemble the BBQ skewers by adding about fivesix pieces of pork to each skewer. Try to alternate fattier and leaner pieces. Repeat until all pieces of meat are skewered.
6. Grill on medium heat until cooked, basting and turning every few minutes on each side. Continue to grill until meat is cooked through
7. Remove from heat and serve as is or with spicy garlic vinegar soy sauce dip.
8. Share and Enjoy!
