浸雞料
香茅1枝、南薑45片、班蘭葉2塊、檸檬葉4片、芫茜根45根、黃薑粉1茶匙
雞預先解凍清洗後切去雞油用鹽、雞粉及少量味醂醃過夜
大煲內加約34升水黃薑粉以少量水先溶化連同香料加入煲內大火煮滾
將雞放入煲內轉小火浸約個半鐘用筷子插入雞腿位置沒有血水滲出即為熟透取出風乾表面後斬件即成
How to make the Hainanese chicken:
Ingredients: 1 stalk of lemongrass, 45 slices of galangal, 2 bandan leaves, 4 kaffir lime leaves, 45 coriander roots, 1 teaspoon of turmeric powder
Defrost and rinse the chicken. Remove the fat and keep it for later use. Marinate the chicken overnight with salt, chicken powder and miren
Add 34L water in the pot, dissolve the turmeric powder with water. Add the herbs and turmeric water in and make it boil
Put the chicken in the broth, cook with low heat for 1.5 hour. Insert a chop stick into the thigh, if clear liquid runs out then it is cooked. Drain well or choose to soak in iced water beforehand and chop for serving.
雞油飯
米1杯半、雞油、蒜頭2粒、紅蔥12粒、櫻花蝦少量、香茅1枝、南薑4片、班蘭葉1塊、檸檬葉2片、浸雞湯1杯半至2杯視乎米種及喜歡的口感
蒜頭切碎紅蔥切絲香茅拍扁切段
雞油煎至出油留起部分煮薑蓉加蒜蓉、紅蔥絲、櫻花蝦、南薑及香茅爆香加米炒香
將炒香的米加入電飯煲鋪上檸檬葉及班蘭葉加浸雞湯煮熟
How to make Hainanese oil rice:
Ingredients: 1.5 cup of rice, chicken fat, 2 cloves of garlic, 12 shallots, dried shrimps, 1 stalk of lemongrass, 4 slices of galangal, 1 bandan leaf, 2 kaffir lime leaves, around 1.5 to 2 cups of chicken broth (depends on the texture you prefer to have)
Mince the garlic, chop shallots into slices, smash the lemongrass and cut in stalks
Heat the pan with oil, add chicken fat and pan fry till the oil is out, keep half of it for cooking the ginger paste. Add garlic, shallot, galangal, dried shrimps and lemongrass and cook till golden brown, add rice and stir fry for few minutes
Put the pan fried rice in rice cooker, add kaffir lime leaves, bandan leaf and chicken broth and cook till done

鍋中加雞油及橄欖油加薑及蒜蓉爆至金黃加鹽及少量糖調味即可

Ingredients: chicken oil, 1 big piece of ginger, 34 cloves of garlic
Finely mince the ginger and garlic
Heat the pan with chicken oil and olive oil, add minced ginger and garlic and cook till golden brown, season with salt and pinch of sugar
