The British colonized Hong Kong for 100 years, and in that time, a mixture of Chinese and British culture emerged, embracing ingredients like ketchup instead of tomato sauce, and utilizing western utensils instead of chopsticks. Today, cha chaan tengs are at the forefront of culture, pushing diner food in new, unexpected, and exciting directions.
