AROUND ME BD COLLABORATION IN KUSHTIA

CHICKEN CURRY: Chicken in curry sauce, white rice and a boiled egg

ADDRESS: Kushtia, Bangladesh

KHICHURI: In a big pot, add oil, onion, garlic, green chili and stir for five minutes. Add buffalo fat and continue stirring. Mix in turmeric, more buffalo fat, oil and stir. Add lentils and a mixture of seasonings: salt, turmeric, chili powder, coriander powder, cardamom, ginger and cinnamon.
Add water and allow it to cook, then pour into a fresh pot. Add rice and allow to cook. After cooking, pour in ghee and then serve.

BUFFALO BIRIYANI: In a big bowl, mix cumin paste, white pepper paste, peanut paste, black pepper paste, almond paste and ginger paste. Divide this into 7 separate bowls and add cardamom seeds, black pepper corn, cinnamon, MSG, chili powder and salt. In a separate big bowl, mix together alu bukhara, cinnamon, pistachios, almonds and special cumin. Fry some onions for garnish and flavor. In a big pot, add oil then add buffalo meat. Add fried onions, the seasonings, sour curd, tomato sauce, green chili and garlic. Add the master spice (cinnamon, cardamom, cumin, mace, nutmeg and black pepper), garam masala, ghee, salt and fried onions. Cook rice with a mixture of cardamom seeds, cinnamon and saffron, powdered milk, ghee, salt, green chili, oil and fat from the buffalo meat and stir. Allow to cook. Add meat to the rice.
